For the béchamel sauce:

  • 2 tablespoons Butter
  • 2 tablespoons All-Purpose Flour
  • 1 1/4 cups Milk, hot
  • salt and freshly ground black pepper to taste
  • 1 cup of shredded Youngsters Goat Gouda

  1. Spread Dijon mustard on both sides of the bread.
  2. Layer ham and a generous amount of shredded Youngsters Goat Gouda.
  3. Close sandwich and pan fry in a skillet with butter over medium heat.
  4. Flip when toasty brown and crispy.
  5. Prepare the béchamel sauce: In a pan, melt the butter and stir in the flour. Cook, stirring constantly, for 2 minutes until bubbly (do not let it burn). Slowly add the milk, stirring constantly, and bring to a boil. Add the shredded Youngsters Goat Gouda and season with salt & pepper to taste, then lower the heat and cook for a few more minutes.
  6. Place the sandwich on a baking sheet and pour béchamel on top.
  7. Bake for 3 minutes and then switch to broil for 3 minutes to brown the cheese.
  8. Remove, cut in half and and enjoy!
