These easy and moist veggie burgers are packed with wild rice, chick peas, and black beans making them super flavorful and perfect for summertime grilling. Topped with Artikaas rich and mild Baby Swiss, and a creamy garlic aioli. These delicious burgers are hearty enough to even satisfy meat lovers.

INGREDIENTS

  • For the Burger
  • 1 1/2 cups of cooked wild rice
  • 1 1/2 cups black beans
  • 2 cups chickpeas
  • 1 teaspoon fresh thyme
  • 3 cloves garlic minced
  • 1/2 yellow onion diced
  • 1 cup panko unseasoned breadcrumbs
  • 1 egg beaten
  • 1 teaspoon olive oil
  • Salt

For the Roasted Garlic Aioli

  • 1 bulb garlic
  • 1 cup mayo
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt

DIRECTIONS

For the Garlic Aioli

Preheat oven to 400 degrees.

Wrap a whole garlic bulb in aluminum foil. Place in the oven for 40 minutes. Garlic will be fragrant and soft. Let the garlic cool out of the foil for 10 minutes.

In a blender or food processor add mayo, lemon juice, olive oil, salt, and squeeze out the garlic from the bulb. Be careful not to get any of the skin in. Blend until smooth. If not using immediately store in airtight container in the refrigerator for up to a week.

For the Burger

Add 2 teaspoons of olive oil to a pan. Over medium-low heat cook down diced onions and minced garlic and 1/2 teaspoon of salt until soft but not brown (approx. 5-7 min).

In another pot boil black beans, chickpeas, and ½ tsp of salt for 10 minutes.

In a food processor add cooked onions, garlic, black beans, chickpeas, thyme, and ½ tsp of salt. Pulse until paste like consistency.

Add black bean chickpea paste to cooked rice, panko, olive oil, and egg. Mix to combine thoroughly.

Form into 5 equal size patties.

If Grilling

Preheat grill to 400 degrees. Once preheated place patties on clean greased grates. Cook for 4 minutes on one side, flip, add a thick slice of Artikaas Youngsters Baby Swiss. Cook for an additional 4 minutes on the other side before removing off the grill.

If Pan Frying

In a pan over medium heat add a drizzle of olive oil. Add patties being sure to not overcrowd the pan. Cook for 4-5 minutes on one side, flip, add a thick slice of Artikaas Youngsters Baby Swiss. Cook for an additional 4 minutes on the other side before removing off the heat.

Assemble burgers with some lettuce, tomato, and a dollop of the garlic aioli.
