Slow Cooker BBQ Chicken
● 2 pounds chicken breasts
● 1 cup bbq sauce
● 1/4 cup water (as needed)
Sliders
● 12 hawaiian rolls
● 3 cups bbq chicken
● 12 slices from a wedge of Artikaas Youngsters Mesquite BBQ Gouda
● 1/2 red onion, thinly sliced
● 2 tablespoons unsalted butter, melted
● 1 tablespoon parsley, finely chopped
● Flaky sea salt, optional
HOW TO MAKE IT
Slow Cooker BBQ Chicken
1. Add the chicken breasts to a slow cooker along with the bbq sauce (if you’re using a thick bbq sauce, you many want to thin it out slightly with 1/4 cup of water).
2. Cook on low for 4-6 hours, or until the chicken shreds easily with a fork. (If you want to speed this part up, skip the slow cooking and use shredded rotisserie chicken instead!)
3. Shred the chicken and return to the slow cooker to fully coat in the sauce. If desired, stir in an extra 1/2 cup of bbq sauce.
4. Instead of making the slow cooker chicken, you can also just toss shredded rotisserie chicken with your favorite bbq sauce!
Sliders
1. Preheat oven to 350°F.
2. Slice the Hawaiian rolls in half horizontally, leaving all the rolls still attached to each other. Place the bottom half on a lined baking sheet.
3. Spread about 3 cups of the shredded bbq chicken evenly over the bottom of the rolls.
4. Then top the chicken with slices of Artikaas Youngsters Mesquite BBQ Gouda and thinly sliced red onion.
5. Place the top half of the rolls on top. Then brush the tops of the rolls with melted butter and sprinkle with chopped parsley and flaky sea salt if desired.
6. Bake at 350°F for 10-15 minutes, or until the sliders are heated all the way through and the cheese is melty. If the tops begin to brown too quickly, tent with aluminum foil for the remainder of the baking time.
7. Remove from the oven and serve warm. Enjoy!
