The classic smash burger, done right. This cooktop version layers crisp lettuce, juicy tomato, and tangy pickles with a crispy-edged smash patty topped with Artikaas 18 Month Aged Gouda slices. Finished with a sweet and easy to make roasted garlic aioli, it's the burger you'll be making on repeat all summer long! Let's get to it.

INGREDIENTS:
Servings: 4 single patty burgers or two double patty burgers
- 1 large yellow onion, sliced
- 1 lb 80/20 ground beef
- 1 pack Artikaas Aged Gouda slices
- 4 hamburger buns
- 1 large tomato, sliced
- 1 cup shredded romaine lettuce
- pickle chips
- neutral high smoke point oil avocado, canola, or vegetable
Roasted Garlic Aioli
- 1 cup mayo
- 1 garlic bulb
- 1/2 lemon juiced
- olive oil
- salt & black pepper
HOW TO MAKE IT:
Roasted Garlic Aioli
1. Preheat the oven to 400°F.
2. Prepare the garlic bulb by slicing off the top to expose the cloves.
3. Drizzle the top with olive oil and wrap tightly in aluminum foil. Roast for 30 minutes, or until the garlic is soft and fragrant. Remove from the oven and open the foil pouch to let the garlic cool.
4. While the garlic is cooling, combine the mayo and lemon juice in a small bowl. Squeeze the roasted garlic into the bowl, then mash it with the back of a spoon. Mix thoroughly, season with a pinch of salt and a few cracks of black pepper. Cover and refrigerate until ready to use.
Smash Burgers
1. Scoop the ground beef into 4 oz balls.
2. Heat the outdoor cooktop or a flat-top pan on the grill. Once hot, add a generous drizzle of oil. Add the onions and a pinch of salt. Cook for about 5 minutes, or until soft and slightly charred.
3. Remove the onions and place the beef balls on the cooktop. Let them sit for 1 minute before smashing them down with a wide metal spatula. Season with salt.
4. Cook for another 1–2 minutes, then flip and salt the other side. Cut the rind off the edges of the Artikaas Aged Gouda slices and place one on each patty. Let the cheese melt fully before removing the burgers from the grill.
To assemble, spread a spoonful of roasted garlic aioli on the bun, then layer the burger patty, onions, sliced tomato, pickles, and lettuce. Enjoy!
