Makes 5 mini waffles
- 1 cup flour
- 2 tsp baking powder
- 1 egg
- 3/4 cup milk
- 1/4 cup neutral flavored oil (canola, vegetable, or avocado)
- 1/4 tsp salt
- 3 oz Artikaas Youngsters Goat Gouda
- spray oil
Toppings
- crème fraîche
- sliced lox
- capers
- red onion
HOW TO MAKE IT
1. In a bowl, combine the flour, baking powder, milk, oil, egg, and salt. Mix until just combined, then fold in the finely grated Artikaas Youngsters Goat Gouda. Let the batter rest for 5 minutes before proceeding.
2. Preheat the waffle maker. Once hot, lightly spray it with cooking spray. Pour 1/2 cup of the waffle batter into the waffle maker and cook until golden brown.
3. Top the waffles with a dollop of crème fraîche, a slice of lox, capers, and thinly sliced red onion. Enjoy!
