This unique recipe features the delightful combination of crispy tortilla chips generously topped with Artikaas Youngsters Gochujang Gouda, a creamy and spicy cheese that brings a perfect balance of heat and richness. Korean Beef
● 1 pound ground beef
● 1/4 teaspoon red pepper flakes
● 2 cloves garlic, minced or pressed
● 3 tablespoons soy sauce
● 2 tablespoons brown sugar
● 1 teaspoon toasted sesame oil
● 2 green onions, sliced
Gochujang Gouda Nacho Cheese
● 12 ounces Artikaas Youngsters Gochujang Gouda, shredded
● 1 teaspoon cornstarch
● 12 ounces evaporated milk (substitute whole milk)
● 1 tablespoon gochujang paste (optional for extra heat)
● Salt to taste
Nachos
● 1 bag tortilla chips
● 1/2 cup kimchi, roughly chopped
● 1/4 cup red onion, diced
● 2 green onions, sliced
● 1/4 cup fresh cilantro, roughly chopped
HOW TO MAKE IT:
Korean Beef
1. Whisk together the soy sauce, brown sugar, sesame oil, and sliced green onions in a small bowl.
2. In a large skillet over medium high heat, add in the ground beef and cook until browned, about 5 minutes. Drain off any excess fat. Then add in the red pepper flakes and minced garlic and cook for another 2 minutes.
3. Stir in the sauce and continue to cook until it thickens and fully coats the ground beef.
4. Remove from the heat and set aside.
Gochujang Nacho Cheese
1. Grate the Youngsters Gochujang Gouda and add to a medium sized bowl.
2. Add the cornstarch to the cheese and toss to fully coat all the cheese.
3. In a large saucepan, bring the evaporated milk and gochujang paste (optional) to a simmer over medium-low heat.
4. Once simmering, add in the cheese and stir gently until fully melted and smooth.
5. Taste and add salt as needed.
6. Serve warm.
Assemble Nachos
1. Place the tortilla chips in a single layer on a baking sheet.
2. Then drizzle with the warm Gochujang Gouda cheese sauce and top with the Korean beef, kimchi, and diced red onion. Then sprinkle with green onions and cilantro if desired. Enjoy!
