This Caramelized Onion Gouda Pasta is pure springtime comfort, loaded with sweet, jammy onions, crispy prosciutto, and melty Youngsters First Milk Gouda, made from the rich, creamy milk of Dutch cows’ first graze of the season. INGREDIENTS:
Servings 4-5 people
- 4 oz prosciutto
- 3 large white onions, sliced
- 4 oz Youngsters First Milk Gouda, shredded
- 4 tbsp butter
- 1 lb pasta
- 3 thyme stems, leaves removed, stems discarded
- 3 garlic cloves, minced
- 2 tbsp flour
- 1 cup chicken broth
- ½ cup heavy cream
HOW TO MAKE IT:
Crispy Prosciutto
- Preheat the oven to 400°F.
- Line a sheet tray with parchment paper and arrange the prosciutto slices in a single layer. Roast for 13–18 minutes, until deep red and slightly darkened. Remove from the oven and let cool for 5 minutes until crisp.
Caramelized Onion Gouda Pasta
- Add the butter to a large sauté pan, braiser, or Dutch oven over medium-low heat. Once hot, add the sliced onions. Generously salt and begin cooking them down, stirring every 10 minutes (the key is to not over mix these). Cook for approximately 35–40 minutes, until the onions are deeply caramelized.
- Once the onions are almost done cooking, prepare the pasta according to package instructions in salty water. Once al dente, drain the pasta but reserve 1 1/2 cups of the pasta water for later.
- When the onions are dark brown, add the garlic and thyme leaves. Stir and cook for 2–3 minutes. Add the flour and cook for 1 more minute, stirring continuously to prevent burning.
- Pour in the chicken broth and bring to a simmer. Once it starts to thicken, add the heavy cream and 1 cup of the reserved pasta water. Simmer for 4–5 minutes, or until the sauce thickens.
- Turn off the heat and stir in the shredded Youngsters First Milk Gouda. Mix until fully melted and incorporated. If the sauce is too thick add in a splash of pasta water until desired consistency.
- Add the pasta and toss to coat. Crumble the crispy prosciutto over the top and enjoy!
