INGREDIENTS
Servings 3 people
BBQ Pulled Chicken
- 1 1/2 lbs boneless skinless chicken thighs
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1/4 tsp white pepper
- 1 cup barbecue sauce
Pizza Sandwich
- 3 200g balls of pizza dough
- 1 6oz wedge Artikaas Youngsters Double Cream Gouda, grated
- arugula
- sliced pepperoncinis
- 9 slices prosciutto
- olive oil
Equipment
- pizza stone or pizza steel

HOW TO MAKE IT:
- Preheat the pizza steel or stone in the oven at its highest heat setting for 30 minutes.
BBQ Chicken
- Place the chicken thighs in a bowl with a drizzle of olive oil, spices, and a generous pinch of salt. Toss to coat.
- Heat a pan over medium heat with a drizzle of olive oil. Once hot, add the chicken and sear for 4 minutes on each side.
- Add ½ cup of water and barbecue sauce. Cover and simmer on low for 35–40 minutes, until the sauce has reduced and the chicken is tender enough to shred with a fork. Remove from the pan and set aside.
Pizza Sandwiches
- On a floured surface, roll out each ball of dough one by one until you form a 10-inch circle. Drizzle olive oil on the surface, then fold the dough in half. Brush the outside with olive oil.
- Place the dough in the oven and bake for 3–4 minutes, until it begins to rise. Flip and continue baking until light golden brown. Cooking time will vary by oven but should take approximately 7–10 minutes.
- Remove from the oven and place the desired amount of grated Double Cream Gouda inside, allowing the residual heat to melt the cheese. Open and top with prosciutto, BBQ chicken, arugula, and pepperoncinis. Cut in half and enjoy!
